How Did It Start?

🔹 Bagels – These chewy, boiled-then-baked rings of dough originated in Poland and became a staple for Jewish immigrants in New York.
🔹 Lox – Derived from the Yiddish word laks (meaning salmon), lox is cured salmon, a delicacy with roots in Eastern Europe.
🔹 Cream Cheese – This was an American addition, first produced in the late 1800s in upstate New York, making it the perfect creamy pairing for salty lox.

By the early 20th century, bagel shops and appetizing stores (like the famous Russ & Daughters, opened in 1914) were serving bagels with lox and schmear (cream cheese), and the combination became an NYC staple.

In your travels you might notice that places like Katz’s Delicatessen and Russ & Daughters serve different types of foods, but they both seems to be deli’s. The answer is, it comes down to Jewish religion.

  • Appetizing stores = dairy & fish (no meat)
  • Jewish delis = meat (no dairy)
  • In kosher tradition, you wouldn’t find a bagel with lox and cream cheese in a Jewish deli, just as you wouldn’t find a pastrami sandwich in an appetizing store.

Some time back I was in Tompkins Square Park in the East Village, and more than three quarters of the people around me were munching on Lox Bagels. Sadly I skipped the memo that day, but I made up for it some time later.
